An organic extra virgin olive oil made exclusively from Koroneiki olives harvested very early, while still green, to preserve the freshness, aromatic intensity and natural character of the fruit.

Produced in limited batches at Sakellaropoulos Organic Farms in Laconia, Greece, Fyllikon First Harvest expresses the freshness and intensity of an early-season harvest — qualities recognised and awarded at some of the most prestigious international EVOO competitions.

Cold-extracted at a controlled 16°–18°C, it keeps a vibrant, expressive profile, with fresh green-grass notes and a distinct character typical of first-harvest oils.

The very early harvest and gentle processing help preserve a high level of polyphenols and the fruit's authentic expression.

The fresh citrus, the green notes and the Mediterranean accents build a complex aromatic profile that brings an unexpected dimension to a dish.

Crafted by Sakellaropoulos Organic Farms, through a natural process of slow homogenisation over five months, followed by four months of natural settling. The oil stays unfiltered, with no artificial flavourings or aroma extracts.

An invitation to explore: from fish and seafood to fine desserts and cocktails with character.

Internationally recognised, Syllektikon placed 2nd worldwide in the EVOO World Ranking (2022 and 2017) and won three stars at the Great Taste Awards, London.

Organic single-estate Kalamata table olives, hand-picked at optimal ripeness and sorted by hand three times. International category “excellent olives”.

Natural fermentation lasting ten months, with no caustic soda and no ferrous gluconate — only time, a weak brine and careful control of the process. No pasteurisation and no chemical additives.

Far less salt than the olives usually sold, with the right firmness and the crunch that comes from natural ripening rather than chemical treatment.

Preserved in organic extra virgin olive oil and organic natural vinegar, made on the same farm — Sakellaropoulos Organic Farms, Laconia.

Kalamata olives from the same organic groves at Sakellaropoulos Organic Farms, in a gourmet recipe: aromatic herbs from Laconia — marjoram, oregano, rosemary, savory, fennel seeds and bay leaf — with fresh lemon juice, organic extra virgin olive oil and flavoured natural vinegar.

Ten months of natural fermentation, unpasteurised and without heat treatment. That is how the micronutrients and the very high polyphenol concentration of the fruit are preserved.

It contains almost 50% less salt than the olives usually sold. No artificial colouring and no deformation of the fruit — the olive stays as it was picked.

The authentic Kalamata flavour is carried further by the herbs and the oil, with a long, complex finish. Great Taste Awards (2 gold stars) and Olymp Taste Platinum.
